Thaw in refrigerator.
- Heat oven to 425°F, place pita rounds on foil-lined baking sheet sprayed with nonstick cooking spray and bake 5 min.
- Meanwhile, in large saute pan over med. high heat add 1 Tbsp. olive oil and seasoned chicken mixture, cook while breaking up chicken 3-5 min. (internal temp. 165°F). Drain all excess liquid.
- Add spinach mixture to chicken and heat through, 2-3 min.
- Evenly distribute and spread chicken and spinach mixture over each pita bread.
- Set oven broiler to low. Evenly top with cheese and broil on low 1-2 min. (checking frequently to avoid burning) until cheese is melted and bubbly.
- Serve whole or as an appetizer by cutting each into four triangles.
