Pub Style Chicken with Mashed Potatoes

Prep Time 25-30 min. | Medium
Thaw in refrigerator.

  1. Preheat oven to 350°F. Spray 8×8 baking dish with nonstick cooking spray.
  2. Using tongs, remove chicken breasts from marinade and place in baking dish. Discard marinade.
  3. Spread lite ranch sauce mixture over chicken breasts.
  4. Bake uncovered for 10-15 min. Sprinkle with cheese/bacon topping mixture and continue to cook 10-15 min. (internal temp. 165°F).
  5. Meanwhile, place mashed potatoes in medium saucepan over med. heat. Stir frequently until heated through and smooth, 7-10 min.
  6. Place chicken on top of potatoes and drizzle with pan juices.
