Thaw in refrigerator.
- Preheat broiler to med. high heat.
- In saute pan over med. high heat, add 1 Tbsp. olive oil. Add both bags of vegetables, 1/4 tsp. kosher salt and saute 5-6 min. Set aside.
- In same pan, add chicken and saute 4-5 min. until fully cooked (internal temp. 165°F). Pour off any excess liquid.
- Remove from heat and add cheese, folding into cooked chicken to melt.
- Toast buns under broiler 1-2 min. To serve, evenly distribute veggies on the rolls, then top with the chicken and cheese mixture.
