Thaw in refrigerator.
- Preheat oven to 400°F. Spray 8×8 baking dish with nonstick cooking spray.
- In a med. saute pan, add chicken mixture and 1/4 tsp. kosher salt. Cook for 4-5 min. or until apples
and vegetables soften. If desired, cut apples into bite-sized pieces. Drain any remaining liquid. - Pour in sauce, reduce heat to med. and simmer until liquid is almost gone.
- Meanwhile, place mashed potatoes in med. sauce pan over med. heat, stirring frequently until heated through and smooth, 7-10 min.
- Add chicken mixture to baking dish and remove bay leaf. Top with mashed potatoes and spread evenly over mixture.
- Bake uncovered 15-20 min., or until golden and bubbly.
- Let rest 5 min. before serving.
