Description

Savory diced chicken mixed with herbs, celery, carrots, apples, and cranberries, all topped with creamy mashed potatoes.

Prep Time 30-35 min. | Medium
Thaw in refrigerator.

  1. Preheat oven to 400°F. Spray 8×8 baking dish with nonstick cooking spray.
  2. In a med. saute pan, add chicken mixture and 1/4 tsp. kosher salt. Cook for 4-5 min. or until apples
    and vegetables soften. If desired, cut apples into bite-sized pieces. Drain any remaining liquid.
  3. Pour in sauce, reduce heat to med. and simmer until liquid is almost gone.
  4. Meanwhile, place mashed potatoes in med. sauce pan over med. heat, stirring frequently until heated through and smooth, 7-10 min.
  5. Add chicken mixture to baking dish and remove bay leaf. Top with mashed potatoes and spread evenly over mixture.
  6. Bake uncovered 15-20 min., or until golden and bubbly.
  7. Let rest 5 min. before serving.
