Sweet Korean Pork Tenderloin with Fried Rice

Description

Tender pork tenderloin glazed with a sweet Asian-style sauce made with teriyaki, sesame oil, honey and Sriracha. Served with Vegetable Fried Rice.

Prep Time 35-40 min. | Medium
Thaw in refrigerator.

  1. Preheat oven to 425°F. Spray a foil-lined baking sheet with nonstick cooking spray. 2.Remove pork tenderloin from bag and discard marinade. Place on baking sheet.
  2. Add desired amount of sriracha to bag of glaze and massage to blend, and spread half of the glaze on top of the tenderloin. Reserve the remaining half for serving. Bake for 25-30 min.
  3. Meanwhile, in a saucepan, add rice and 1 1/4 cups of water. Bring to a boil, stir once, cover and cook on low heat for 15-20 min. Remove from heat and let sit covered 5-10 min.
  4. Preheat a large saute pan over med. high heat and add 1 Tbsp. olive oil. Once heated place cooked rice in pan and saute for 3-4 min., the rice will brown slightly. Immediately, add fried rice sauce with veggies to rice and stir to combine, cook for 3-4 min or until sauce is absorbed.
  5. Remove tenderloin from oven, let rest 5-10 min. Slice into 1/4 inch slices (internal temp. 145°F). Drizzle remaining glaze over sliced pork and serve with Vegetable Fried Rice. *Tenderloin can be safely served lightly pink in the center.
