Thaw in refrigerator.
- In a large pot over med. high heat cook bacon until crispy. Set aside in paper towel-lined small bowl.
- To the same pot, add contents of soup base bag, mashed potatoes, and 3/4 cup water. Whisk until fully combined. Bring to a boil, then reduce heat and simmer for 4-5 min., stirring occasionally.
- Add chicken and potato mixture. Simmer an additional 4-5 min., stirring occasionally.
- To serve, ladle soup into bowl and top with cheese and bacon.
