Description

Buttery, toasted almond sauce drizzled over the top of golden chicken breasts and served with orzo.

Prep Time 20-25 min. | Medium
Thaw in refrigerator.

  1. In a med. saucepan, bring 2 cups of water to a boil. Add orzo pasta and cover. Reduce heat to low and simmer 8-10 min. stirring frequently until all moisture is absorbed and orzo is tender. Remove from heat and set aside.
  2. Meanwhile, in large saute pan, over med. low heat, toast almonds approx. 3 min., remove from pan and set aside.
  3. In the same pan heat 1 Tbsp. olive oil and increase heat to med. high.
  4. To flour bag, add 1/4 tsp. of kosher salt. Pat chicken dry, place in seasoned flour bag and toss to coat.
  5. Brown chicken breasts 5-6 min. per side (internal temp. 165°F).
  6. Remove chicken from pan, cover to keep warm.
  7. Add wine to pan and stir, scraping any brown bits from the bottom of pan. Simmer until wine thickens slightly, approx. 2 min.
  8. Remove pan from heat. Add butter and green onions, stirring until butter melts and sauce thickens.
  9. Serve chicken over orzo, drizzled with sauce and topped with almonds.
