Campfire Grilled Pork Chops with Mini Potato Pancakes

Prep Time 25-30 min. I Medium

Thaw in refrigerator.

  1. Preheat broiler to high heat.
  2. Add 1/2 tsp. of kosher salt to Campfire rub bag and massage to combine. Add pork chops, reseal, and shake bag to coat completely.
  3. Broil pork chops 3-4 min. per side (internal temp. 145°F). Rest 5 min. before serving with Sweet Potato Fries.

NOTE: Overcooking will cause pork chops to be tough.
