Thaw in refrigerator.
- In a saucepan, add rice and 1 1/2 cups water. Bring to boil, stir once, cover and cook on low heat for 18-20 min. Remove from heat and let sit covered 5-10 min.
- Meanwhile, using tongs, remove chicken from marinade. Discard marinade. Cut chicken breast into bite-size pieces and place in breadcrumb bag. Seal and shake bag to evenly coat. Pour chicken and breadcrumb mixture onto a plate and press remaining breadcrumb mixture firmly into chicken.
- Heat 1-2 Tbsp. olive oil in large saute pan over med. heat. Brown chicken 3-4 min. per side.
- Pour the sauce over browned chicken, cover with lid, and simmer over med. low heat for 8-10 min., basting regularly to coat the chicken thoroughly (internal temp. 165°F).
- While chicken cooks, preheat a large saute pan or wok over med. high heat and add 1 Tbsp. olive oil. Once heated, place cooked rice in pan and saute for 3-4 min. to lightly brown rice. Immediately, add fried rice sauce with veggies to rice and stir to combine, cook for 3-4 min. or until sauce is
absorbed. - Remove chicken from pan and drizzle sauce over top. Serve with Vegetable Fried Rice.
