Lemon Chicken Piccata over Orzo

Prep Time 25-30 min. | Medium
Thaw in refrigerator.

  1. In med. saucepan, bring 2 cups of water to a boil. Add orzo pasta and cover. Reduce heat to low and simmer 8-10 min. stirring frequently until all moisture is absorbed and orzo is tender. Remove from heat and set aside.
  2. Meanwhile, heat saute pan with 1 Tbsp. olive oil over med. high heat. Brown chicken 3-4 min. per side.
  3. Pour 3/4 cup of water into sauce ingredients and massage to blend. Pour into pan with chicken. Bring to boil, reduce heat and simmer uncovered for 10-15 min. (internal temp. 165°F).
  4. Serve chicken and sauce over orzo.

  3. Pour 1 1/2 cups of water into sauce ingredients and massage to blend. Pour into pan with chicken. Bring to boil, reduce heat and simmer uncovered for 10-15 min. (internal temp. 165°F).
  4. Serve chicken and sauce over orzo.
