Grilled Chicken Power Bowl

Prep Time 20-30 min. | Medium
Thaw in refrigerator.

  1. In a saucepan, add rice and 1 1/4 cups of water. Bring to a boil, stir once, cover and cook on low heat for 15-20 min. Remove from heat and let sit covered 5-10 min. Fluff with fork before serving.
  2. Meanwhile, preheat med. saute pan over med. high heat. Remove chicken with tongs and discard marinade. Saute 5-6 min. per side or until chicken is cooked through (internal temp. 165°F). Allow chicken to cool slightly and then slice into strips.
  3. In same saute pan over med. low heat, add 1 Tbsp. olive oil. Add chickpeas and 1/2 tsp. kosher salt. Cook for 3-4 min. or until heated through.
  4. Massage dressing bag to combine.
  5. Mix bag of carrot salad in separate mixing bowl to combine.
  6. To assemble: Evenly distribute rice into the bottom of each bowl. Evenly divide carrot salad and chickpeas onto one side of bowl and cooked chicken strips onto other side. Cut off corner of dressing bag, drizzle over top, and sprinkle with cashews.
