French Chicken Cassoulet

Cooking Instructions:

Medium Serving

  1. Thaw in refrigerator
  2. Preheat oven to 350 degrees.
  3. Heat a dutch oven or oven-safe pot over medium high heat. Meanwhile, season chicken breasts with salt and pepper. Add 1 Tbsp of oil to heated pan and sear chicken breasts. Cook for 1-2 min per side- we are looking for browning, the chicken will finish cooking in oven.
  4. Remove chicken from pot and st aside. Add sausage mixture to pot and saute for 5 min. The sausage should brown and vegetables should soften.
  5. Add bean base to pot and stir to combine. Bring mixture to a simmer and cook for an additional 5 min.
  6. Add seared chicken breasts back to pot and partially submerge in bean and sausages. Cover pot with lid and place in oven. Cook for 45 min.
  7. Remove pot from oven and remove chicken breasts and set aside to cool slightly. Evenly sprinkle herbed breadcrumbs over sausage and bean mixture, spray breadcrumbs with oil spray and place back in oven. Turn broiler to LOW and allow the breadcrumbs to toast and become golden brown about 3-5 min. Meanwhile, shred or diced chicken breasts.
  8. To serve, scoop mixture with toasted breadcrumbs and top with cooked chicken.
