Cubano Chicken with Black Beans and Rice

Cooking Instructions:

3 Servings

Thaw in refrigerator.

  1. In saucepan, add rice and 1 1/8 cups of water. Bring to a boil, stir once and cook covered on low for 15-20 min.
  2. Pre-heat grill to med-high or broiler to high.
  3. After rice is done cooking, remove lid and add seasoned black beans, stir once and replace lid. Cook covered on med. low for 10 min. more.
  4. Cut orange into quarters.
  5. After rice and black beans are done cooking, grill or broil chicken and oranges for 4 min. per side (Internal temp. 165F). Oranges should be charred and juicy.
  6. Serve grilled chicken with black beans and rice. Squeeze charred oranges over chicken for an extra burst of flavor.

  3. After rice is done cooking, remove lid and add seasoned black beans, stir once and replace lid. Cook covered on med. low for 10 min. more.
  4. Cut oranges into quarters.
