Chicken Tikka Masala over Jasmine Rice

Prep Time 25-30 min. | Medium
Thaw in refrigerator.

  1. In a saucepan, add rice and 1 1/4 cups of water. Bring to a boil, stir once, cover and cook on low heat for 15-20 min. Remove from heat and let sit covered 5-10 min. Fluff with fork before serving.
  2. Meanwhile, in a med. saute pan over med. heat, cook spiced onion mixture until the onions become translucent and fragrant. About 4 min.
  3. Add coconut tomato sauce and 1 tsp. kosher salt to spiced onion mixture and stir to combine. Add chicken breasts and yogurt marinade to the pan, emptying contents of bag.
  4. Bring entire mixture to a boil and then quickly reduce heat to low and simmer. Cover and let simmer for 15-20 min. until the chicken is cooked through (internal temp. 165°F).
  5. Remove cooked chicken breasts and dice into bite-sized pieces if desired. Place back in sauce and toss to coat.
  6. To serve, spoon rice onto plate and ladle a generous portion of chicken and sauce over top.
