DO NOT THAW PUFF PASTRY.
Thaw in refrigerator.
*Prepare Corn Medley per separate cooking instructions provided.
- Separate individual puff pastry squares and lay out on baking sheet sprayed with nonstick cooking spray to thaw for 5-10 min.
- Preheat oven to 400°F. Heat 1 Tbsp. olive oil over med. high heat in nonstick saute pan. Place chicken in pan, spread out evenly and allow to brown in the pan for 1 min. without stirring. Cook for 5-7 min., stirring to break apart the meat (internal temp. 165°F).
- Remove from heat and place in a med. mixing bowl. Add empanada filling and thoroughly combine with cooked chicken.
- Evenly divide mixture into the middle of each puff pastry square on sprayed baking sheet. Brush edges with egg wash and fold into a triangle. Use a fork to seal edges and puncture holes on top of pastry. Brush tops with egg wash.
- Bake 20-25 min. until golden and puffed up.
- Allow to cool for 5-10 min. Serve with salsa and Corn Medley.
