Cheddar Filled Mini Meatloaves with Mashed Potatoes

Prep Time 30-35 min. | Medium
Thaw in refrigerator.
*Prepare Seasoned Mashed Potatoes per cooking instructions provided.

  1. Preheat oven to 425°F.
  2. Place ground beef into large seasoning mixture bag, seal and massage to thoroughly combine. Remove from bag and shape into 6 balls. Spray a muffin pan with nonstick cooking spray.
  3. Place a ball into each muffin cup and use your thumb to create a little well in the middle. (If you don’t have a muffin tin, to form the mini loaves, divide the meat mixture into 6 equal sizes, roll into balls. Place on a foil-lined baking sheet sprayed with nonstick cooking spray). Evenly distribute shredded cheese among meatloaves by pressing the middle of each ball and pinch the top ends together to seal the cheese inside. Spread glaze on the top of each meatloaf.
  4. Bake 25-30 min. until brown with crisp edges (internal temp. 160°F). Allow meatloaves to rest 5 min. Serve with Seasoned Mashed Potatoes.
