Golden Shrimp with Parmesan Risotto

Prep Time 30-35 min. | Medium
Thaw in refrigerator.

  1. Preheat oven to 375°F. Drain marinade from shrimp and discard marinade.
  2. Place butter in a med. large microwave safe bowl and melt in microwave in 30 sec. intervals (or melt in med. saucepan).
  3. Add breadcrumb mix and 1/4 tsp. kosher salt to melted butter and stir to blend.
  4. Spray 8×8 baking dish with nonstick cooking spray.
  5. Remove half of the shrimp from bag with tongs and place evenly on bottom of pan. Top with half of the breadcrumbs. With tongs, add the remaining shrimp and top with remaining breadcrumbs.
  6. Bake in oven, uncovered for 25-30 min. (internal temp. 145°F).
  7. Meanwhile, add rice and 1/2 tsp. kosher salt to med. pot with 1 2/3 cup water. Bring to a boil, stir well and simmer on low uncovered. Keep uncovered until rice is completely cooked, 10-15 min.
  8. Stir risotto sauce into rice and cook for an additional 5-8 min. Serve shrimp over risotto.
