Thaw in refrigerator.
- In a saucepan, add rice and 1 1/4 cups of water. Bring to a boil, stir once, cover and cook on low heat for 15-20 min. Remove from heat and let sit covered 5-10 min. Fluff with fork before serving.
- Meanwhile, place butter in large saute pan, melt over med. high heat. Remove chicken from bag and brown 2-3 min. per side. Remove from pan and keep warm.
- Add tomato mixture, 1/2 cup water, and desired amount of cayenne pepper to same pan. Cover and cook on med. low for 5 min. Add chicken back to saute pan and simmer for 10-15 min. (internal temp. 165°F).
- Remove chicken from pan and keep warm. If desired, cut into bite sized pieces. Massage bag of coconut milk mixture to combine. Slowly whisk in coconut milk and bring to a boil stirring constantly. Reduce heat to low and simmer 3-4 min.
- Add chicken back to pan with sauce and let sit for 5 min. Serve chicken and sauce over jasmine rice.
