Bruschetta Chicken with Orzo

Prep Time 20-25 min. | Medium
Thaw in refrigerator.

  1. In med. saucepan, bring 2 cups of water to a boil. Add orzo pasta and cover. Reduce heat to low and simmer 8-10 min. stirring frequently until all moisture is absorbed and orzo is tender. Remove from heat and set aside.
  2. Heat broiler to high. Spray a foil-lined baking pan with nonstick cooking spray.
  3. Add sauce to med. saucepan on med. high heat. Bring to boil, reduce heat and simmer 10-12 min. stirring occasionally.
  4. Remove chicken from marinade and place on baking pan. Discard marinade.
  5. Broil on high 4-5 min. per side (internal temp. 165°F).
  6. Serve with sauce spooned over chicken and orzo.
