Terracotta Chicken with Pita & Hummus

Prep Time 10-15 min. | Medium
Thaw in refrigerator.

  1. Add desired amount of red pepper flakes to marinating chicken. Massage chicken in sealed bag to coat.
  2. Heat 1 Tbsp. olive oil in large saute pan over med. heat. Using tongs,
    remove chicken from marinade, discard marinade. Place chicken in pan and brown 4-6 min. per side (internal temp. 165°F).
  3. Meanwhile, warm pita bread in the microwave at 10 second intervals until soft and warm.
  4. To serve, slice chicken breasts into strips. On each pita round, evenly distribute hummus and top with sliced chicken.
