Thaw in refrigerator.
- In a saucepan, add rice and 1 1/4 cups of water. Bring to a boil, stir once, cover and cook on low heat for 15-20 min. Remove from heat and let sit covered 5-10 min.
- Meanwhile, preheat oven to 400°F. Place turkey mixture into mixing bowl and mix to fully combine. Firmly roll turkey mixture into 12-14 golf ball-sized meatballs.
- Place meatballs on foil-lined baking sheet sprayed with nonstick cooking spray and cook for 15-20 min. (internal temp 165°F).
- Meanwhile, place ginger glaze in saucepot and bring to a boil, reduce heat and let simmer for 10 min.
- Preheat a large saute pan over med. high heat and add 1 Tbsp. olive oil. Once heated place cooked rice in pan and saute for 3-4 min., the rice will brown slightly. Immediately, add fried rice sauce with veggies to rice and stir to combine, cook for 3-4 min or until sauce is absorbed.
- To serve: Brush meatballs with ginger glaze and serve over fried rice. Drizzle remaining ginger glaze over top.
