Description

Salmon filets are marinated in a tangy glaze of mango chutney, orange marmalade and savory spices. Served over Garden Veggie Rice.

Prep Time 25-30 min. | Medium
Thaw in refrigerator.

  1. Preheat broiler to high heat.
  2. In a saucepan, add rice and 1 1/2 cups of water. Bring to a boil, stir once, cover and cook on low heat for 18-20 min. Remove from heat, add veggie mix, and let sit covered 5-10 min. Fluff with fork before serving.
  3. Meanwhile, line baking sheet with foil and spray with nonstick cooking spray.
  4. Remove salmon from glaze, place on prepared baking sheet and pour remaining glaze over salmon.
  5. Broil for 5-7 min. until salmon flakes with fork (internal temp. 145°F). Serve with Garden Veggie Rice.
